Behind the Blackbird olive oil is a family, vertical olive oil production unit. This allows owners to oversee all processes in person. The olive mill, with a tradition from 1900, belonged to grandfather Giannis. Subsequent generations inherited it and technologically renewed it. Today, the fully modernized centrifugal olive mill, 3rd generation, with the grandson Giannis as its successor, selects the best fruit varieties, marries them in a balanced way, works them with respect to the raw material, applying all the required, strict specifications. In this way it ensures high quality olive oil (organic-extra virgin-virgin), worthy of its name.
